It sounds like a good project.

What about phpgroupware? And Sylpheed as the mail client if they are used to 
Outlook. And some lightweight windowmanager with Windows-like behaviour and 
look'n'feel. Linux terminal server / K-12 LTSP . And Apache + MySQL + PHP 
for their database.

If this keeps going forward, and there's a need for cable-pullers, Linux 
installers/configurators.... let me know
