If you are really paranoid you should use OpenBSD.  It runs Apache in a
chrooted environment so even if they break in via your webserver they
can't wander around in your system (much less your network).

Of course the truth of the matter is that if you keep it simple (avoid
using some heavy PHP apps you don't understand) you should be just fine
with Apache.
