Others have already said Dell.  They work great.  If you are looking for
a local vendor, then check out Stay-Online.  They've built me some
custom systems that worked great and were very inexpensive.

You won't need a lot of RAM (unless you have a lot of web sessions), but
you will want a SCSI based RAID as the disk subsystem.  Mail servers do
a lot of disk I/O.
