Oh that's easy.
Have a copy of the HOWTO handy.
Check out the OpenLDAP migration scripts (probably already installed on
your system, possibly under /usr/share/openldap/migration). They will
generate the LDIF's you want to look at without actually incorporating
them into LDAP if you don't want them to.
As for schema, in my slapd.conf I have:

include /etc/openldap/schema/cosine.schema
include /etc/openldap/schema/inetorgperson.schema
include /etc/openldap/schema/nis.schema
include /etc/openldap/schema/redhat/rfc822-MailMember.schema

All of the above are canned schemas that came with Red Hat Linux.
