You can't edit GNOME menus through GConf editor, but if you're really
interested in editing your menus, maybe this will help:

There is also a patch available against gnome-panel-2.2.0 to add a Menu
Editor. It allows you to easily edit the Applications menu. If you can
find the patch, this will probably be the best way to go.

After all of that, I can't seem to actually find the patch. However,
there will probably be menu editing support in GNOME 2.4, which was due
out today.
