Hmmm, I would replace the Cyrus IMAP with the simpler UW-IMAP that comes
with most distributions.  It does a fine job of basic IMAP and POP.

If you do go with Cyrus, I think you'll have to use it's LDA instead of
Procmail - but I'm told it is full featured and can do the job.

For web-based mail, try Squirrelmail.  Works great with UW-IMAP and is
very simple to setup.

If you're really looking for a neat project, then you might want to add
Clam Anti-virus to the mix, and let MailScanner handle running the
Anti-virus and Spam filters.
