Lab conditions are fine.  Real world you don't want all your eggs in one 
basket.  Best practices are suggestions to save your butt when RR drops 
your connection again or you have to take your mail server down for an 
upgrade to CentOS.

No.  Your clients just get bounce messages if your internet connection 
goes down for too long.  Having a backup MX saves you the embarassment.  
You need the backup DNS for the backup MX to work.
