1. Disclaimer * I do not claim to be competetant with
this issue. The following info was from a security
briefing with nice govermental types carrying guns.
The presenter works for a wireless security firm in FL
and flew to RTP for the presentation. *
2. The issue of low traffic. Reinjection of data
modified can drastically reduce the time to get the
interesting packets. I believe there may be a tool for
this.
3. Security guru mentioned that outside of wireless
ISP in his town (in FL) was interesting place to sniff
as was heavy mail traffic.

I can envision a mini-ITX box setup as a "stand alone
Wireless industrial espionage station" positioned just
about anywhere. Leave it for a day/week/month and have
it email you when done. Simple. Don't even have to
recover it if the payoff from espionage is $$$M's. set
it to self destruct or some such James Bondian tactic.
