Ignoring issues of familiarity---which can't be ignored, really, but
you're the only one who can judge them---I think the only issue is
that stable needs to _already have what you're going to need_, because
that's what you're going to have to work with for the next two years.

And even that figure assumes the release schedule that's planned for
etch goes off well, about which I will just say, "Hope springs
eternal".

I will mention, though---and with the admittedly large caveat that I
have a *lot* of Debian experience---that I have responsibility for
about 20 servers at various places, many of which are commercial
production machines running 24x7 services with heavy loads, and I find
that periodically syncing up with testing works just great as an
alternative to trying to track unstable (which I used to do before
testing existed, and which I wouldn't recommend anyone not prepared to
deal with sometimes huge breakage) or sticking with stable.

A couple of these machines were originally installed in 1999, and have
been upgraded continuously since then with practically no downtime.
