At this point, I'd probably recommend just using Ubuntu.  It will do everything
you listed, it's installation is a piece of cake, and it's very much up to date.
You should make sure you add the universe and multiverse repositories
to the apt sources.list, but other than that, there's almost nothing
(if anything)
custom that needs to be done with it.
