That's an impressively diverse hardware list.

You might be interested in the "Linux From Scratch" series:
   http://www.linuxfromscratch.org/

If you're only interested in learing how to use Linux to do the
kinds of things most people do with a Windows box, it's 
probably too low level.

But if you're interested in things like:
- what the bootloader really does
- how the libraries and compilers affect the build environment.
- cross-compiling for alternate hardware.

it's worth looking into. 
One warning: you'll need to be comfortable on the command line. It's
not for the strictly pointy-clicky types.
