I'd say just get an iPod.  I'm partial to the iPod nanos these days.  A
quick google search of 'ipod linux' shows quite a few hits.

A quick search for 'linux itunes' turns up a project called Banshee:

Anyway. if it's an mp3 player you want I'd suggest an iPod nano.  Great
interface, well built, good battery life.. all the good stuff.
