Well, FireFox will connect to Outlook Web Access...

Evolution, as you noticed, will operate as an Exchange client.

I assume you want more than just mail, so something like thunderbird  
talking to IMAP isn't acceptable.

I don't know of any Exchange-client options for linux other than:
1) Outlook under wine
2) Evolution
3) OWA
