I'd use squid to setup a transparent proxy, and then use sarg to make  
pretty html logs of your squid data files.  Shouldn't be that hard to  
setup, there are plenty of tutorials out there.  If your able to use  
OpenBSD as your firewall, you able to setup squid and sarg
