I'll second recommendations for both LFS and Gentoo. Installing LFS is a
real marathon (*you* are the package manager!) Rather than an install
CD, you get a book with instructions and explanations. It's not a
practical distribution at all, but the process of building it will teach
you many things.

I use Gentoo at work and at home. I love it as a distribution, and it
really does get you closer to the lower level stuff than all the binary
based distributions. It's not as hardcore as LFS, taking much less time
to install, and it is a reasonable choice of everyday OS. You won't
learn quite as much with it as with LFS, but you'll still learn plenty
more than you are likely to with any other source based distribution.
