I assume that is has not rebooted itself either.  Nothing unusual in the logs ??

I would add a small script that pings one or more IPs on different
interfaces every 10 seconds, logging the result along with a date
stamp.  Perhaps it's not a CPU spike but something network related
that is resetting.
