Magnus, I think this book will be a perfect tutorial for what you want:

The book is not out in print yet and I am working with the authors to add
in some of the hacks, but there are hacks for interfacing to the GPIO pins
for simple I/O, plus more complicated circuits using I2C/SPI sensors,
GPS's, motor controllers, 110v light controllers, etc among several
software hacks as well.

It is currently set as Dec, so it will be a bit of a wait. However, until
then, let me know what you want to do and I can either assist, or point you
in the right direction online.
