Just an FYI... you can set up an Apple ID that manages stuff like
your app purchases, but that does not mean you have to store your
other data in iCloud.

Recently, I switched my iPhone so that it no longer syncs contacts
with iCloud, but instead syncs directly to my personal ownCloud
instance (running at Linode).  Similarly, it syncs calendar info
with my ownCloud.  The mail client works with my private email
server.

So it's perfectly reasonable to keep "your data" under your own
control.  Of course, there is data related to their service (phone,
iMessage/SMS, applications, Find My iPhone, Find My Friends, maps,
etc) that send data to Apple.

But don't make the assumption that it's an all-or-nothing arrangement.
