I *think* you want "always_bcc" in your config (
http://www.postfix.org/postconf.5.html#always_bcc) or sender_ and
recipient_bcc_maps (
http://www.postfix.org/postconf.5.html#recipient_bcc_maps &
http://www.postfix.org/postconf.5.html#sender_bcc_maps).
