I will not be able to make this but have something you may want to consider.  Using crashplan to backup the server.
The "trusted few" could know the TriLug crashplan username and password.
Crashplan is setup on the main server.  If you have other folks willing to donate some hard drive space (and bandwidth) and also run crashplan you could backup to them.
i.e. crashplan on the master server sends it's backup to one or more trilug folks.  The data that sits on the trilug end user machine is encrypted so the local person can not see any files.
This is an actual backup with file versions, not an rsync.

This is a free feature in crashplan.
If you want to spend $5/mth you could also backup to the encrypted crashplan cloud.
