100baseT is still better than WiFI for many applications. Low latency, reliable, fast enough for compressed HD streaming, doesn't have to share a radio channel with anybody.
If you do rewire certain rooms, consider doing a vertical pipe to the attic/basement/crawl space. You'll want to plug the pipe when not moving wires, but that way you have some amount of future-proof access. HDMI, USB3, Fiber-optics, plasma-pipe, fluid-molecular-bio-memory, Spider-transfer-protocol, who knows?

I have purchased a home built in 2000, which has a significant amount of
standard CAT5 (not 5e) run to various rooms of the house. Is it worth it
for me to spend the effort to re-wire these for LAN? I know the best I can
get is 10/100 speeds, which I am doubting in today’s world is worth it. I
value the opinions here, so I am curious your thoughts.
