Agree that if you like Ubuntu, then go ahead and use it.  For your use case, you can probably stick with the LTS, which is currently 20.04.  While most packages will remain unchanged for the life of the LTS, except for security and bug fixes, the hardware stack will be updated to the versions being used in the 6mo releases, which is nice (e.g., 20.04 will get the updated kernel, Mesa, etc. that shipped with 20.10 in the near future, if it hasn’t already).

If you want something more lightweight, Ubuntu MATE would be a great choice.  The lead developer is also the head of Canonical’s desktop team, and a lot of effort is put into ease of use and polish.
