Pulling and burying Ethernet will give you serious problems with voltage
spikes too. I lost several hundred dollars worth of equipment even with
grounded surge suppressors on both ends of the cable. One of the sure
suppressors *melted*.
The absolute best way is to direct-bury fiber optic cable.

Go ahead and do single mode. You may be able to get cheaper cable on eBay,
but $1/ft isn't awful.

Luckily you know someone with a fiber splicer that will show you how to use
it and let you borrow it.
If you're not up for all of that, the Ubiquiti wireless bridges that others
posted are the way to go.
