Normally, my taxes are simple enough that I can do them on a spreadsheet I first developed in gnumeric a couple decades ago. Every year, it needs minor modifications (well, major under the Trump administration) to reflect new rules, but the IRS and NCDOR instructions are really not so bad - indeed, stunningly good given the insanity Congress hands them. I used a CPA because of the ultra opaqueness of real estate taxes for 2021 and 2022, but for 2023 I'm back to gnumeric.
Yes, evince does work for the fill-in-the-blank IRS PDFs.
