To answer your short question, editing /etc/X11/xdm/Xservers to read:
:0 local /usr/X11R6/bin/X -nolisten tcp
will cause X to start in runlevel 5 without opening port 6000 in Red Hat.
Don't know if it's the same for other distros - probably similar.
I'm afraid I don't have answers for your other questions.
