Actually, there's an even easier way.  At the command line type:

artsshell suspend

This will suspend the arts sound server and allow you to run
other things that access the sound card.  When they stop, it
will automatically run arts again when an arts enabled app
wants the sound card.

If you use esd you can do the same thing.  I believe it's command is

esdctl off

When you want it to come back on, though, you have to type

esdctl on

This is what I have to do to get sound with the quicktime plugin
from crossover plugin.
