Well you know what kind of company I work for, and that we can beat up 
a few kinds of software harder than just about anything.  And here's 
what we've come up with:
1) Print daemon - CUPS, hands down.  It rocks.
2) MTA - Qmail has been in use for awhile but Postfix is earning a lot 
of respect these days for raw performance, stability and ease of 
administration.
3) RDBMS - No favorites here.  Oracle is the fastest & most scalable 
for what we do.  PostgreSQL is the closest free software but for a 
number of reasons isn't going to be an Oracle killer.  We do need an 
Oracle killer though because Oracle is a budget killer.
