I'm not a fan of dovecot.  It just doesn't seem to work right in many 
situations.  I've been using courier-imap for several years now as my 
personal IMAP server and have been quite pleased with it.  The source 
tarballs for courier-imap include a spec file for building RPMs that 
work just fine on FC1 and FC2 boxes.  Note that courier-imap uses 
MailDir style mailboxes so you would have to migrate your existing 
mail.  I was moving from MH to IMAP when I switched so this was not 
terribly difficult.
