Now, if you *really* wanna get into a BBQ discussion, you gotta consider
taking this recipe from the NC Pork Growers Association that I stumbled
upon 25 years ago for a vinegar-based sauce with a dozen spices, calling
my buddy in Kinston with a pig farm, getting a keg of golden nectar from
the heavens, inviting my redneck NC family and friends, inviting them
ferners as well, digging a pit in the field where you stage the event
and playing some bluegrass. Ferners might not know about the real deal.
Oh, and plan on communicating with others by including "yee haw" in your
vocabulary to practice up for the Spivey's Corner Hollering Contest.
Might as well bring the hand canons and bust off some rounds. Nothing
like the bang of a 6 shooter (preferably .357 Colt since only wussies
have Smith and Wesson). Now, *that's* BBQ. Folks that can't have a good
time should not come to the party.
However, I'll settle for lunch next week even if it is par boiled
Memphis rub. I mean, what the heck? You might have to flirt with the
devil to understand God.
Oh, shoot. Religion. I'll stop right there and leave it at BBQ (not that
there is a difference).

Red Hot and Blue is Memphis style BBQ.
First they dont slow cook the meat
Second they use a dry rub (No vinegar)
Third they use that tomato sauce crap
Fourth there is no vinegar
Fifth it aint no Carolina BBQ.
The closest place that has decent BBQ is Olde Tyme BBQ off the Hillsboro
extention (or is it Western Blvd.)
This place has decent BBQ and a good Brunswick Stew. They also have a
real decent Chicken Pastree (some may call this chicken slick but they
would be wrong). For ya'll folk from above the Mason-Dixon line
(Fer-ners) Chicken Pastree is not a confection but is a chicken stew
with strips of dough in it. You could call it a Chicken Dumpling but you
would still be wrong. Great comfort food.
By the way, there is no decent BBQ in Cary (not at Johnnies BBQ either).
