I have also been wanting to take a look at "unbound", a
recursive DNS server.

The difference between a "recursive" DNS server like BIND
or unbound, and a DNS proxy like dnsmasq, is that the
recursive ones try to get their upstream answers from the
registrars of the domains and the root nameservers, where
dnsmasq simply sends upstream requests to some other DNS
server like opendns or your upstream ISP.

The difference is subtle, but one that I would like to
explore.
