After I composed my email to the group, it occurred to me that I should 
install the "old school" font server XFS on my desktop machine and then 
restart the X11 server (log out and back in).  Sure enough, the fonts in 
my troublesome server-side app look at lot better... not modern, by any 
stretch, but at least I can read them.

I'd still like to be able to determine which fonts the application is 
requesting, so I can override them in a ~/.fonts.config file (or 
equivalent) on the server.  But the urgency has gone down now.
