MakeMKV is a great program for it, and it is completely cross-platform.

Closed-source, unfortunately, but it works great on my Debian box.

It's free while in Beta, but you have to keep updating it to keep using
it.  It's annoying.  I went ahead and bought it even though it was more
than I was comfortable with ($50 or $60 I think), because I support what
they're doing, enabling me to use my purchased content as I see fit.
