NovaLUG had a brilliant EFI and GPT presentation about 18 months ago.  It’s up on YouTube at https://www.youtube.com/watch?v=rRGDXy65Plg <https://www.youtube.com/watch?v=rRGDXy65Plg>  I recommend watching it.

No, you can’t make the /boot the EFI partition anymore than you can install the MBR in /boot.  Yes, EFI has to be FAT, because that’s what the firmware can read.  It’ll be separate from /boot.
