I take it the hosting service is somewhere out in internet land and you can't 
just walk in there and pull the disk, or boot off a usb key and copy all the 
files.

Can you contact the hosting service and ask them to zip the whole mail 
directory? Maybe they'll charge for it, but that's reasonable.
