If I'm reading this correctly, you are looking to set up a VPN endpoint at
home that would allow you to connect from networks afar that would
establish a tunnel to your home while you were somewhere remote?  If this
is the case Ubiquiti routers, some at least, provide a zero configuration
WireGuard VPN they call Teleport. It is not as much fun as building your
town, granted, but it can give you some peace of mind running the VPN until
you have the hours and expertise setting up a VPN server from scratch.
