Joe has a lot of good advice.

I highly recommend installing a VNC server on the kids' computer,
and a VPN so you can pull up a screenshot from wherever you are.
There is a nice OpenVPN client and a VNC client for the iPhone.

DNS logs are nice, too, but it can be a real chore to slog
through 1000 content delivery network domains to find the actual
web sites they are visiting.
